Concha’s Infused
1 cup warm milk of choice
1 3/4 tsp instant yeast
Set aside
5 cups flour
1 cup sugar
1/4 tsp salt
1 tsp vanilla extract
1 cup infused butter
1 egg or 3 tbsp of applesauce
Knead dough fully and cover with plastic in warm humid area (I wash my dishes near it with hot water or put in near the stove if it’s on. Let rise 2 hours.
Galleta top
1/2 cup butter
1 cup flour
1 cup powdered sugar
Knead into dough, roll out on a silicone/parchment/floured surface use a cup to get 10x 3-4 inch circles
Knead dough once more and section into 10 fist shaped balls, brush with milk and add cookie top you can slice the traditional shape on with a good knife or get creative. Let rise covered in plastic in your greased or parchment lined pan for 1 hour.
Bake at 285° for 45 minutes, enjoy!
